Gluten Free Potato Salad

Potato salad is one of those things that’s just better homemade. Not only that, but when you control the ingredients that go into your recipe, you don’t have to worry about whether it has gluten in it. This gluten free potato salad goes fast in our house! We love this recipe and wanted to share it with you.

The Eggs

We recently began changing our habits to incorporate more locally sourced and organic ingredients in to our cooking. Not only is it pleasureable to shop at the local markets and farms for our ingredients, the flavor difference is incredible. For years I couldn’t justify paying the extra costs for organic items. As it became feasible, we slowly began switching over. One of the easiest things to switch was our eggs. We get them from a local organic farm that has free range hens. The first time I tried them I couldn’t believe the difference in taste! They seem almost creamy and they are divine. I think in recipes like this one where the eggs are a primary ingredient, it does make a difference to the overall flavor and quality of the salad.

The Veggies

I like to include lots of veggies in my potato salad to make it super healthy. I like to use radish, celery, green onion and fresh parsley. This part is flexible and I change it up based on what I have in the fridge. I like my gluten free potato salad to have some crunch.

The Dressing

For the dressing I make sure that I buy gluten free ingredients. Nowadays, it’s easy to find mayonaise that is labelled gluten free. I also use organic, unfiltered, unpasteurized apple cider vinegar with the mother in it such as this one. The mother is the healthy bacteria in the vinegar that is often removed in store bought brands because it gives it a cloudy appearance. This is a shame because it is the healthiest part! It contains probiotics that help your digestion and are good for immunity. Finally, I use organic yogurt to not only cut in half the higher fat mayo, but also to impart more nutritional value. It’s high in protein, is rich in nutrients and has more of those great probiotics.

Gluten Free Potato Salad

Ingredients:

  • 6 potatoes diced and boiled
  • 3 eggs boiled and chopped
  • 2 celery stalks chopped
  • 3 radishes chopped
  • 2 green onions chopped
  • 2 tbsp chopped parsley
  • 4 tbsp apple cider vinegar divided
  • 1/2 cup mayonaise
  • 1/2 cup plain yogurt
  • 1 tsp dijon mustard
  • 1 tsp paprika
  • salt and pepper to taste

Instructions:

Once you have boiled and cooled the chopped potatoes, sprinkle with 2 tablespoons of cider vinegar and toss.

In a separate bowl combine mayonaise, yogurt, dijon, remaining 2 tablespoons of vinegar, salt, pepper and paprika. Add chopped egg, radishes, celery, green onion and parsley. Stir together gently. Add cooled potatoes and combine.
