So, I have recently discovered the yumminess that is steel cut oats. We have always enjoyed a warm bowl of healthy oatmeal in the winter. But until recently I did not have a clue how to use steel cut oats. I like to use my instant pot to cook my oatmeal, but recipes that involved both the instant pot and the steel cut oats were a bit hard to find. So I went to the drawing board and figured out how to make plain steel cut oatmeal in the instant pot. Once I figured that out, I had some fun making different variations. I made this Fruit & Nut Steel Cut Oatmeal the other day and Alex absolutely raved. She said, “Mom, this is blog worthy!” and so here it is!

Steel cut oats are beneficial because they are minimally processed. As a result they contain more fibre and density than regular rolled oats. They are rich in protein and an excellent source of Vitamin B complex and iron. Steel cut oats have a low glycemic index making them a good choice if you are diabetic.

Fruit & Nut Steel Cut Oatmeal

Ingredients:

  • 1 cup steel cut oats (gluten free if needed)
  • 3 cups water
  • pinch of salt
  • 1/2 cup raisins
  • 1/2 cup dried cranberries
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • pecans, pumpkin seeds, and sunflower seeds for topping

Instructions:

Add oats, water, salt, raisins, cranberries, cinnamon and vanilla to the instant pot. Mix together. Lock the lid and close the vent. Select the pressure cook option. Set for 10 minutes on high. When the instant pot indicates it is done, do a quick releaseby turning the vent to open which allows the stem to escape. Once the lid unlocks, give it a good stir. Dish up your oatmeal and top with toppings. Sweeten with a drizzle of honey and enjoy!
