There is no shortage of delicious gluten free banana muffin recipes. Muffin recipes are one of the easiest things to convert to gluten free. I like my gluten free banana muffin recipe because it is also low fat and low sugar. These muffins are the epitome of healthy!
It is such a quick, easy recipe and they always turn out great! We love to have a batch of muffins on hand for easy snacks and quick lunch packing additions. But the very best thing about this gluten free banana muffin recipe is that they don’t dry out after a couple of days like most gluten free baking does! These are such a hit with my family that no one even realizes they are gluten free.
Gluten Free Banana Chocolate Chip Muffins
Makes 12 muffins
Ingredients:
1 ¾ cups 1-1 gluten free flour
1 tsp baking soda
¼ tsp salt
¼ cup applesauce
¾ cup 1-1 granulated stevia sweetener
2 eggs
½ cup yogurt
3 mashed bananas
½ cup gluten free chocolate chips
Instructions:
Preheat the oven to 400f. Grease or line muffin pan.
Stir all the dry ingredients together in a bowl. Cream together the applesauce, stevia and one egg. Add the second egg and blend well. Add the yogurt and mashed banana. Mix well. Pour the wet ingredients into the dry ingredients in the bowl. Mix until everything is moistened. Fill prepared muffin pan and bake in 400f oven for 20-25 minutes.
