I know what you are thinking. Tofu for breakfast? That’s a little too out there for me! But what if I told you that I fed this to my kids growing up and it was one of their favorite breakfasts? I mean if toddlers can love it, anyone can! Lemon Tofu French Toast is creamy and sweet with a hint of citrus. It is actually so tasty, I have served it to guests for brunch. It’s really that good!

Tofu (or bean curd) is a source of complete protein. It also contains all nine essential amino acids. It is a plant source for iron and calcium, making it a great addition to a vegetarian diet. It is bland in flavor but has a unique ability to absorb the flavors it is cooked in.

Tofu is also gluten free. We have made this recipe with gluten free bread and it turns out awesome. It actually makes better gluten free french toast because it has time to soak up and absorb the batter while it bakes.

Lemon Tofu French Toast

Ingredients

  • 2 eggs
  • 1/2 cup soft tofu
  • 1/4 cup liquid honey
  • 1 tsp pure vanilla
  • 1 tsp grated lemon rind
  • 1-2 tsp lemon juice
  • 1/2 tsp salt
  • 6 slices bread (gluten free if you prefer)
  • nutmeg and cinammon

Preheat oven to 350f. Place bread in a greased 9 x 13 pan. In a blender, blend eggs, tofu, honey, vanilla, lemon rind and juice until well mixed. Pour mixture over bread and sprinkle with cinammon and nutmeg. Bake for 20 minutes.
