I know what you’re thinking, loaded burritos for breakfast you say? I get it, I do. But there’s something about mexican food for breakfast right?
Mike and I just recently returned from a very relaxing all inclusive resort stay in Los Cabos. Every day, without fail, I loaded my breakfast plate with enchiladas, chilaquilles, pico di gallo, and guacamole. Of course I gorged on fresh fruit and pastries too!
Once we returned home, Mike went into holiday withdrawal and immediately started planning more trips.
Mexican food is his weakness so to cheer him up, you guessed it! Burritos for breakfast!
I load these burritos up! They are stuffed with ground pork cooked with taco seasoning and diced canned tomatoes, scrambled eggs with cheese, and refried beans. This is a protein packed way to start your day.
This recipe is one of my meal prep faves. You can make them up, roll them, wrap them in wax paper and freeze them. Then its a quick, handy to go breakfast on a weekday morning. For other easy meal prep tips, check out this post.
Loaded Breakfast Burritos
Makes 10 burritos
Ingredients:
- 350 g ground pork
- 2 Tbsp taco seasoning
- 1 14 oz can diced tomatoes
- 3 eggs
- 1 Cup shredded cheese
- 1 can refried beans
- 10 large tortilla wraps
Instructions:
Brown the pork in a lightly oiled fry pan until the meat is no longer pink. Sprinkle with taco seasoning, add tomatoes and stir well. Let simmer on low heat until most of the liquid has evaporated. Set aside.
Whisk together the eggs and cheese. Scramble in the fry pan until eggs are set.
To assemble, place a wrap on a clean flat surface. Spread the middle section with refried beans. Then add the meat mixture, followed by the egg mixture. Make sure not to overfill, or they will be hard to roll.
Wrap each burrito in wax paper and freeze in tupperware.
Then as needed take one out, heat and eat!
