On the weekend in our house a big, indulgent, homemade brunch has become a regular thing. These artisan pear and sage sausage patties are often the star of the show! We all have different schedules and come and go all week long. We love to gather and cook, relax and reconnect over an amazing brunch spread.
After we found out Alex couldn’t have gluten I began making my own sausage patties. Back then we didn’t have as many clearly marked gluten free options as we do today. Occasionally we do buy them now but I find I prefer the flavor of our homemade version, not to mention they are all natural and lower cost too!
Often I will meal prep a batch then put them on tin foil on a cookie sheet and freeze them in the freezer. Once frozen, I remove them to a Tupperware and store in the fridge. Voila, frozen mini sausage patties ready to cook!
I have many different versions of this recipe in my head. Sometimes I combine lean ground turkey with the pork. Using quinoa flakes rather than breadcrumbs makes this a healthy gluten free source of fiber and protein. I use fruit to add a special flavor and moisture. Sometimes I would add some pure maple syrup because as you know, we are Canadian eh! I was making them with apple until Mike developed a sudden, inexplicable allergic reaction to them! That’s how I discovered the wonderful flavor combination of pear and sage, yum!
We enjoy these sausage patties with the traditional eggs and hash browns, alongside french toast, or with fluffy buttermilk pancakes. Don’t forget the coffee! You can see our morning coffee ritual here!
Artisan Pear and Sage Sausage Patties.
Makes 10 mini sausage patties
Ingredients:
- 350g ground pork
- ½ of a firm pear grated
- 1 egg
- 1 clove finely minced garlic
- ½ cup quinoa flakes
- 1 ½ tsp dried sage
- ½ tsp salt
- 1 tsp dried thyme
- Pinch of nutmeg
- Generous grind of pepper
Instructions:
Combine all ingredients and mix thoroughly. Form into mini sausage patties. Patties can be frozen at this point if you wish. Cook in a lightly oiled fry pan over medium heat until evenly brown and cooked through.
