So this is the really funny story of how my Banana Nutella Overnight Oats recipe was first conceived. We were self isolating due to Covid and in light of this, we decided to order our groceries online. Everyone was contributing their two cents as to what they wanted included in the order. It rapidly devolved into a junk food extravaganza. The crowning glory was the moment that Mike said he wanted chocolate. Turns out they sell dairy milk chocolate bars by the case! Omg should we even?? Mike firmly insisted we needed a case of chocolate bars.

The funny part of the story is when I got a phone call from the store confirming that our order was ready and the clerk asked me “Ahh.. did you actually mean to order a case of chocolate bars or was that an accident?” I replied by mumbling something about self medicating with chocolate. 

It appears that in our family, chocolate is what will see us through. I decided to make up a batch of overnight oats for breakfast and Alex promptly pipes up “Sounds good, can they be chocolate?” My Covid strapped pantry does not yield up much in the way of cocoa, although I did find a forgotten jar of Nutella at the back. Whoohoo, I can make this work! Consequently, Nutella Banana Overnight Oats was conceived.

So we are crushing hard on the whole overnight oats trend. They are so quick to whip up the night before. Or sometimes I do a big batch up during our meal prep. That way, they are in the fridge and everyone can help themselves to a quick, nutritious breakfast during the week. You can easily double this recipe to have more on hand.

Banana Nutella Overnight Oats

Serves 2

Ingredients:

  • 1 cup almond milk
  • 1 cup rolled oats ( we use gluten free)
  • A banana 
  • 1 Tbsp chia seeds
  • 1 Tbsp hemp seeds
  • 4 Tbsp Nutella
  • 1 Tbsp quinoa flakes

Instructions:

Combine everything except the banana in a large bowl. Mix well and store in a container with a lid in the fridge. Let sit overnight.

Before serving, top with sliced banana.
