Chorizo breakfast scramble

If you’ve read some of our other posts you have  probably come to the realization that we love our breakfasts. Like a lot! One of our favorites on the weekend is a breakfast scramble. Most of the time it’s a hash brown base with a bit of whatever’s in the fridge as add ins. This particular recipe occurred because we made Jambalaya the same week and had extra chorizo in the fridge! Enjoy with a strong cup of coffee, or a mimosa if you’re feeling boujee!

Ingredients for breakfast scramble

Chorizo Breakfast Scramble:

Serves 4

Ingredients:

1 chorizo sausage

4 potatoes

4 eggs

2 tbsp onion diced

1 tbsp canola oil

1 tsp garlic minced

½ tsp paprika

½ tsp rosemary

¼ tsp onion powder

Pinch of salt

Top with shredded cheese.

Instructions:

In a skillet on medium heat add canola oil and potatoes diced into small chunks. Cook covered for about 10-15 minutes or until potatoes are soft. Then uncover and turn heat to medium high. Add the chorizo sausage chunks at this point. Cook for another 10 minutes or until potatoes are browned and crispy. Add Garlic and onion after bringing heat back down to medium. Then add spices. Shove the potatoes to the sides of the pan then add eggs. They can be fried in the pan, or add some cream or milk and scramble them depending on your preference. Once eggs are cooked, top with cheese and serve.
