Why have normal plain mashed potatoes when you can be super over the top, and have decadent mashed potatoes? This recipe was born when I realized that an old family favorite toast topper would be amazing in mashed potatoes! The cheesy goodness of the parmesan, with the added flavour of shallots and worchestershire sauce, and the secret ingredient hot sauce makes for shockingly delicious potatoes that are anything but boring.

Let’s talk about the potatoes for a moment. Starting off with some really nice yukon gold, or thin red skinned potatoes is going to give you an extra smooth creamy mash. Farmers market potatoes are my favorite, but I can make do with a nice bag of regular potatoes too.

Decadent Mashed Potatoes:

Ingredients:

  • 6-8 potatoes washed and peeled
  • 1 cup parmesan cheese
  • 1/3 cup mayo
  • 1/4 cup butter
  • 1 tsp worcherstershire sauce
  • 2 shakes Franks Hot Sauce
  • 1-2 shallots depending on the size

Instructions:

Chop the potatoes into small cubes and throw them in a pot of water. Bring to a boil. Cook until soft. Drain and mash. I feel like you probably know this already? While the potatoes are cooking, in a small pan heat the butter, and saute diced shallots until soft. Usually it only takes a couple minutes. Then add the Franks and the worchestershire sauce and remove from heat. Add the mayo, then throw it all in with the potatoes as you mash them. You can add the parmesan now too. Mix thoroughly, then serve! (There’s the option to pop the potatoes into a dish and lightly broil for a crisp golden top!) Pairs really well with a good steak!
