Amazing Gluten Free Crepes

I love making gluten free crepes. I invite friends over for brunch and it’s fabulous! I am bragged about frequently. However finding a gluten free crepe recipe that had simple ingredients and wasn’t super finicky in the crepe pan was impossible. So I went back to making an old family recipe that was fool proof. I swapped the all purpose flour for Bulk Barn 1-1 Gluten Free Flour or if I can’t get that, Superstore President’s Choice Gluten Free Flour. These mixes are both easy to work with and often you can simply swap them in a regular recipe and it will turn out well. With the gluten free crepes I had to adjust the liquid ratio a bit before it started working properly every time.

These are plain crepes that you can fill with sweet or savoury filling. Ice cream, Nutella, ham and eggs, hollandaise, whatever your heart desires! 

Makes 8-10 crepes

 Ingredients:

1 cup gluten free flour

2 eggs

1 cup milk

1 cup water

¼ tsp salt

3 tbsp butter

1 tsp vanilla (optional if you are using a sweet filling)

Instructions:

Place all ingredients in a blender in order, and blend on high for 30 seconds. Scrape down sides and repeat at least 2-3 times until smooth. You want all the ingredients well mixed and lots of air incorporated.

In the meantime heat a crepe pan or small non-stick frying pan on med-high heat. Once the pan is hot enough (If you sprinkle some water drops on it they should sizzle and evaporate right away) Pour about ½-1 cup of batter into the pan. How much depends on the size of crepes you want and the size of the pan you use.

Immediately begin to swirl the pan spreading the batter into a circle. This part takes a ton of practice. You want to swirl it thin enough and fast enough before it sets. Once the batter sets, you wait until it cooks through. Then you can gently peel one of the sides up. The bottom should be slightly golden.

You can then place it on a plate, or if you feel overconfident like me you can attempt to flip the crepe and cook the other side for a moment. This helps them to be a little sturdier when filling them, but you run the risk of messing up the flip and breaking or folding the crepe. Once all the crepes are cooked you can fill them as desired and enjoy! I recommend pairing with either mimosas or our boozy salted caramel cold brew coffee!
