Jalapeno hummus makes me happy. Have I mentioned the predilection for mexican food in our house? We like things a little spicy around here. If you were to come by for a visit, you couldn’t help but know this about us when you first walk in the door!

Mexican makes its way into our meal planning every week. Sometimes it’s blatantly obvious, but sometimes it’s really sneaky. This Jalapeno Hummus is one of those sneaky guys! At first glance, it looks to be your average run of the mill hummus. What makes this guy unique is the use of lime juice instead of the usual lemon and of course the jalapeno, which kicks it up a notch! Topped with a bit of chopped green onion, Jalapeno Hummus is our all time favorite hummus. We pack it in lunches for a healthy, protein packed snack. It’s great with crackers but even better with nacho chips. We’ve  been known to use it as a spread on a sandwich or in a wrap.

Jalapeno Hummus:

Ingredients:

  • 1 can chickpeas
  • 1-2 tbsp avocado or olive oil
  • 4-5 tbsp lime juice
  • 2 tbsp chicken stock or (vegetable stock for vegetarian)
  • Salt and pepper to taste
  • 1 jalapeno pepper finely chopped
  • 2 green onions finely chopped

Instructions:

Place all the ingredients except the jalapeno and green onion in a blender or food processor. Blend for 30 seconds, then scrape down the sides. Continue to blend until smooth.

Move mixture to a bowl and mix in jalapeno and green onion by hand. Refrigerate.  Let sit several hours for flavors to blend.
