I love appies, I always have. Am I the only one who never makes it to the main course part of the menu at a restaurant? I always end up ordering appies for my dinner, I can’t help myself! This practise may have spilled over into my home cooked meals as well… It’s a thing at our house to have appie dinners. We literally make 4 or 5 appies and eat them for dinner. We have done it when we entertain too. I try to plan a nice dinner for friends but can’t narrow down my appie choices to just one, so appies for all! This Satisfying Spinach and Artichoke Dip is one of those recipes that works well for dinner too. It is warm, satisfying and makes a ton. I serve it with some fresh, homemade bread and a bowl of homemade soup. Dinner is served!

Satisfying Spinach and Artichoke Dip:

Spinach and Artichoke dip

Ingredients:

  • 1 pkg frozen spinach thawed and excess water squeezed out
  • 1 can artichoke hearts drained
  • ½ cup light mayonnaise 
  • ½ tsp dried basil
  • 2 large cloves of garlic minced
  • ½ cup yogurt
  • 4 oz cream cheese
  • ½ cup parmesan cheese
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions:

Preheat oven to 375f.

In a blender or food processor, blend spinach and artichoke coarsely. Add remaining ingredients and pulse until mixed. Spread dip into an ovenproof casserole dish. Cook for 30 minutes until bubbly and a bit brown at the edges. Serve warm with bread or crackers.
